Here are some quick and easy recipes to get you started.

Quesadillas

Ingredients
2 Large Flour Tortillas
2.5 oz. Pepper Jack or Cheddar Cheese, according to preference
1/2 Tbsp. Butter
3 Tbsp. Salsa

Instructions: Spread the bottom of one tortilla with 1/4 Tbsp. of butter. Spread the cheese on top of this tortilla, then spread the salsa over the cheese. Place the second tortilla on top of the first. Spread the remaining 1/4 Tbsp. of butter on top of this tortilla. Heat a large frying pan to medium high heat. Place the quesadilla in the pan and cook, covered, until the tortillas are lightly browned and the cheese is melted. Tip: If the cheese does not melt before the tortillas brown, then pour a tsp. of water into the covered pan. The steam will help melt the cheese.


Apple Scrambled Eggs

Ingredients
6 Eggs
1/2 an Apple, sliced (I prefer Granny Smith, but McIntosh and Empire also work well. Feel free to experiment.)
1/4 cup Whole Milk
1.5 oz. grated Cheddar Cheese
dash of Salt
1/4 tsp. Pepper

Instructions: Preheat a large frying pan on the stove. Cook the apples in the pan until they start to brown. You want them firm but not crunchy. While the apples are cooking, beat the eggs in a large mixing bowl. Mix in the milk, grated cheese, salt, and pepper. Remove the apples to a plate and pour the egg mixture into the pan. Use a spatula to constantly mix the eggs while cooking. When the eggs are halfway cooked, put the apples back in the pan with the eggs. Cook the eggs to your preference. Serves 2 mildly hungry students or 1 starving student.


Stir Fry

A stir fry is one of the most basic, tastiest dinners that you can make. Choose a meat (or tofu), pick an interesting combination of vegetables, mix with some rice, and you have yourself a meal. Steak or chicken cutlets pair very well with most stir fries. Vegetables can include peppers, onions, mushrooms, zucchini, broccoli, yellow squash, tomatoes, asparagus, green beans, cauliflowers, carrots, and more. Here is an example of our favorite stir fry.

Ingredients
1 lb. Steak
1 Bell Pepper
1/2 large Yellow Onion
2 cloves Minced Garlic or 1 tsp. Garlic Powder
1 package sliced Mushrooms
2 cups uncooked Rice
3 Tbsp. Olive Oil
1/2 Tbsp. Onion Powder
3/4 tsp. Salt
1 tsp. Pepper
4 cups Water

Instructions: Bring water to a boil, covered, on the stove. Pour in the rice and turn down the heat. Sprinkle with 1/2 tsp. salt. Cover and let simmer for 30 minutes, or until all the water is absorbed. Pour 2 Tbsp. olive oil into a large frying pan and heat to medium-high heat. Cut the steak into bite size pieces and place in the pan. Cook for 5 minutes. Slice the onion, pepper, and mushrooms into large bite size pieces, and throw into the pan with the steak (after 5 minutes of cooking the steak) along with the rest of the olive oil. Stir while mixing in the rest of the salt, pepper, onion powder, and garlic. Cook until the vegetables begin to brown. Remove from heat and mix with the rice in a large bowl. Serve hot. Serves 4.


Pasta With Chicken and Mushrooms

Ingredients
1 lb. Fettucine Pasta
1 lb. Chicken Cutlets
1 Bell Pepper
1/2 tsp. Salt
1/4 tsp. Pepper
1/2 tsp. Onion Powder
Parmesan Cheese

Instructions: Add salt and bring 6 cups of water to a boil in a large pot. While water is heating, cut the chicken and peppers into bite size pieces. Pour olive oil into a frying pan and heat to medium-high heat. Cook chicken in the pan for 5 minutes, then add bell pepper. Season with salt, pepper, and onion powder. When the water has reached a rolling boil, pour in fettucine. Cook 7-10 minutes. Drain the pasta and add the chicken, peppers, and parmesan cheese. Serves 3-4.
